The east wall mural here is extremely good, and I thank you for posting it. But the altar arrangement is not: it actually makes it impossible to celebrate ad orientem.
I just checked again; you're right! That's a shame, but I would be surprised if there isn't provision for ad orientem regardless of what the mock-up looks like. I hope I'm right.

Maybe, but I doubt it. Pluscarden Monastery where the Bishop was abbot (and where I first got to know him) does their liturgy as orientem
That’s nice, but you can see it here in the fifth image of your post: there’s only space to stand on one side of the altar, the “versus populum” side.
